That's a nice spread! I haven't decided what i'm going to cook for xmas yet but I started on some osso bucco yesterday. Couldnt find veal shanks so I went for oxtails. Seared and simmered down, then in the sous vide for 24hrs. Gonna make some polenta later to soak up the goodness.

We always do a rib roast for Christmas. But it’s either smoked or in the oven. Never done it fried? Sounds intriguing.

YouTube, I like to cook and like trying new Recipes.

Smoked ham with an apricot glaze, mashed potatoes, mac and cheese, parmesan roasted French green beans, homemade cranberry sauce and King’s Hawaiian sweet rolls. Have a couple bottles of different Malbecs to go with dinner and have a Christmas Mule recipe to try for cocktails. Still have some Cold Mountain in the beer fridge.

It was about 45 min for 11.5# five rib In peanut oil and I let it rest 20 min. Dropped it in at 350 and cooked at 325.
If you had time, I'd say to lay the smoke to it for a while real low (150ish) then finish it off in the fryer.
 
Got a homemade white chocolate raspberry cheesecake in the oven now.

Our traditional Xmas eve dinner is sketti. Forgot a pic last night.

Dinner today was grouper. It IS Friday, after all. (I am actually Methodist, BTW)
