Me and the wife went to Whole Foods on Saturday to get lunch. Roasted brisket on the hot bar FTW! They also had some killer sides. One of which was so good I had to make some myself on Sunday.

Chipotle sweet taters rock! All you need is 3 taters, low sodium balsamic vinaigrette, cilantro, can of chipotle peppers in adobo sauce, honey, salt and pepper.

Here's how: cut taters into 1/2" cubes, place on cooking pan, pour 1/2 cup of the vinaigrette over them, cook at 400* for 30 minutes.
In another small bowl add 1/2 cup of the vinaigrette, 1/3 cup of chopped cilantro,3 tablespoons honey, 2-3 peppers minced up and some salt and pepper.
Once the taters are done, place in bowl and pour in the dressing you just made.
Eat and be carb fat the rest of the evening.

Pics or it didn't happen:
